Description

A delicious and healthy Spanish garlic soup that is perfect for any time of the year.


Ingredients

Scale
  • 10 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups water
  • 1 onion, chopped
  • 2 large tomatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped


Instructions

  1. In a large pot, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until the onion is translucent.
  2. Add the diced tomatoes, paprika, salt, and black pepper. Cook for another 5 minutes.
  3. Pour in the vegetable broth and water, then bring to a boil.
  4. Reduce the heat and let it simmer for 15-20 minutes.
  5. Blend the soup until smooth using an immersion blender.
  6. Stir in the fresh parsley before serving.

Notes

  • For extra flavor, try adding a splash of sherry vinegar before serving.
  • This soup can be made ahead of time and stored in the fridge.
