A delicious and healthy Spanish garlic soup that is perfect for any time of the year.
Ingredients

- 10 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups water
- 1 onion, chopped
- 2 large tomatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- In a large pot, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the diced tomatoes, paprika, salt, and black pepper. Cook for another 5 minutes.
- Pour in the vegetable broth and water, then bring to a boil.
- Reduce the heat and let it simmer for 15-20 minutes.
- Blend the soup until smooth using an immersion blender.
- Stir in the fresh parsley before serving.
Notes
- For extra flavor, try adding a splash of sherry vinegar before serving.
- This soup can be made ahead of time and stored in the fridge.
