Description

Indulge in these Healthy Twix Cookie Cups, a guilt-free treat that combines a delicious cookie base with a creamy filling and a rich chocolate layer.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/4 tsp salt
  • 1/2 cup dates, pitted and chopped
  • 1/3 cup almond butter
  • 1/2 cup dark chocolate chips
  • 1 tbsp coconut milk


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix almond flour, coconut oil, maple syrup, and salt until combined.
  3. Press the mixture into the bottom of each cupcake liner to form a cookie base.
  4. Bake for 10-12 minutes until lightly golden; let cool.
  5. In another bowl, combine dates and almond butter until smooth; layer this onto the cooled cookie base.
  6. Melt dark chocolate chips with coconut milk, then drizzle over the top.
  7. Refrigerate for at least 30 minutes to set before serving.

Notes

  • Store leftovers in an airtight container in the fridge for up to a week.
  • For a nut-free version, substitute almond flour with oat flour.
