- 1 cup almond flour
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 1/4 tsp salt
- 1/2 cup dates, pitted and chopped
- 1/3 cup almond butter
- 1/2 cup dark chocolate chips
- 1 tbsp coconut milk
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, mix almond flour, coconut oil, maple syrup, and salt until combined.
- Press the mixture into the bottom of each cupcake liner to form a cookie base.
- Bake for 10-12 minutes until lightly golden; let cool.
- In another bowl, combine dates and almond butter until smooth; layer this onto the cooled cookie base.
- Melt dark chocolate chips with coconut milk, then drizzle over the top.
- Refrigerate for at least 30 minutes to set before serving.
Notes
- Store leftovers in an airtight container in the fridge for up to a week.
- For a nut-free version, substitute almond flour with oat flour.
