- 1 tablespoon olive oil
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 pound shrimp, peeled and deveined
- 1 pound white fish, cubed
- 1 can coconut milk
- 2 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 cup heavy cream
- 2 cups cauliflower, riced
- 1 cup green onions, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and garlic, sauté until soft.
- Stir in shrimp and fish, cooking until seafood is opaque.
- Pour in coconut milk and vegetable broth, bring to a simmer.
- Add thyme, paprika, and riced cauliflower; cook until cauliflower is tender.
- Stir in heavy cream and green onions, cook for an additional 5 minutes.
- Season with lemon juice, salt, and pepper before serving.
Notes
- This chowder can be made ahead and reheats well.
- Feel free to substitute seafood based on availability.
- Adjust the thickness by adding more or less broth.
