A rich and creamy chowder loaded with seafood and keto-friendly ingredients.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 pound shrimp, peeled and deveined
  • 1 pound white fish, cubed
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup heavy cream
  • 2 cups cauliflower, riced
  • 1 cup green onions, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and garlic, sauté until soft.
  3. Stir in shrimp and fish, cooking until seafood is opaque.
  4. Pour in coconut milk and vegetable broth, bring to a simmer.
  5. Add thyme, paprika, and riced cauliflower; cook until cauliflower is tender.
  6. Stir in heavy cream and green onions, cook for an additional 5 minutes.
  7. Season with lemon juice, salt, and pepper before serving.

Notes

  • This chowder can be made ahead and reheats well.
  • Feel free to substitute seafood based on availability.
  • Adjust the thickness by adding more or less broth.
