A delicious and flavorful Herb-Crusted Rack of Lamb served with a refreshing Mint Pesto.
Ingredients

- 1 rack of lamb
- 2 tablespoons Dijon mustard
- 1 cup fresh parsley, chopped
- 1/2 cup fresh breadcrumbs
- 3 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix together the breadcrumbs, parsley, garlic, thyme, olive oil, salt, and pepper.
- Coat the lamb rack with Dijon mustard and then press the herb mixture onto the meat.
- Place the rack in a roasting pan and roast in the preheated oven for about 20-25 minutes for medium-rare.
- Let the lamb rest for 10 minutes before slicing.
- Serve with mint pesto on the side.
Notes
- Make sure to let the lamb rest before slicing to keep it juicy.
- You can use store-bought mint pesto if short on time.
