Description

A delicious and flavorful Herb-Crusted Rack of Lamb served with a refreshing Mint Pesto.


Ingredients

Scale
  • 1 rack of lamb
  • 2 tablespoons Dijon mustard
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh breadcrumbs
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together the breadcrumbs, parsley, garlic, thyme, olive oil, salt, and pepper.
  3. Coat the lamb rack with Dijon mustard and then press the herb mixture onto the meat.
  4. Place the rack in a roasting pan and roast in the preheated oven for about 20-25 minutes for medium-rare.
  5. Let the lamb rest for 10 minutes before slicing.
  6. Serve with mint pesto on the side.

Notes

  • Make sure to let the lamb rest before slicing to keep it juicy.
  • You can use store-bought mint pesto if short on time.
