Description
This high protein broccoli cheddar soup is creamy, comforting, and packed with nutrients!
Ingredients

- 2 cups broccoli florets
- 1 cup carrots, diced
- 1 cup onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup unsweetened almond milk
- 1 cup shredded cheddar cheese
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked and shredded chicken (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add carrots and broccoli, cook for another 5 minutes.
- Pour in vegetable broth and bring to a simmer.
- Once the vegetables are tender, use an immersion blender to blend until smooth.
- Stir in almond milk, cheese, paprika, salt, and pepper. Cook until heated through.
- If using, add shredded chicken and heat until warm.
- Serve hot and enjoy!
Notes
- For extra creaminess, blend more or less of the soup to your desired consistency.
- Feel free to add other vegetables like spinach or cauliflower.
