Description

This high protein broccoli cheddar soup is creamy, comforting, and packed with nutrients!


Ingredients

Scale
  • 2 cups broccoli florets
  • 1 cup carrots, diced
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup unsweetened almond milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked and shredded chicken (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add carrots and broccoli, cook for another 5 minutes.
  3. Pour in vegetable broth and bring to a simmer.
  4. Once the vegetables are tender, use an immersion blender to blend until smooth.
  5. Stir in almond milk, cheese, paprika, salt, and pepper. Cook until heated through.
  6. If using, add shredded chicken and heat until warm.
  7. Serve hot and enjoy!

Notes

  • For extra creaminess, blend more or less of the soup to your desired consistency.
  • Feel free to add other vegetables like spinach or cauliflower.
