Delicious and healthy almond joy bars made with keto-friendly ingredients, perfect for the holiday season!


Ingredients

Scale
  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup erythritol (or sweetener of choice)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup shredded unsweetened coconut
  • 1/2 cup dark chocolate chips (sugar-free)
  • 1/3 cup whole almonds


Instructions

  1. In a bowl, mix together almond flour, cocoa powder, erythritol, melted coconut oil, vanilla extract, and salt until well combined.
  2. Press the mixture into a lined baking dish to form the base layer.
  3. Spread shredded coconut evenly on top of the base layer.
  4. Melt dark chocolate chips over a double boiler and drizzle over the coconut layer.
  5. Top with whole almonds and refrigerate until set.
  6. Cut into bars and serve.
