- 1/4 cup erythritol (or sweetener of choice)
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup shredded unsweetened coconut
- 1/2 cup dark chocolate chips (sugar-free)
- 1/3 cup whole almonds
Instructions
- In a bowl, mix together almond flour, cocoa powder, erythritol, melted coconut oil, vanilla extract, and salt until well combined.
- Press the mixture into a lined baking dish to form the base layer.
- Spread shredded coconut evenly on top of the base layer.
- Melt dark chocolate chips over a double boiler and drizzle over the coconut layer.
- Top with whole almonds and refrigerate until set.
- Cut into bars and serve.
