- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound Italian sausage, casings removed
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 teaspoon Italian seasoning
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ¼ cup grated Parmesan cheese (plus more for serving)
Instructions
- Set the Instant Pot to sauté mode and add olive oil. Once hot, add the diced onion and sauté for about 3 minutes until softened.
- Add minced garlic and Italian sausage to the pot. Cook until the sausage is browned, breaking it apart with a spoon, about 5-7 minutes.
- Pour in the chicken broth and diced tomatoes (with their juice). Stir to combine.
- Close the lid of the Instant Pot and set it to high pressure for 10 minutes.
- Once the cooking time is complete, carefully release the pressure. Open the lid and stir in the heavy cream, chopped spinach, Italian seasoning, salt, black pepper, and Parmesan cheese.
- Let the soup simmer on the sauté setting for an additional 5 minutes to heat through and wilt the spinach.
- Serve hot, garnished with extra Parmesan cheese if desired.
Notes
- For a spicier version, use hot Italian sausage instead of mild.
- Add additional low-carb vegetables like zucchini or mushrooms for extra flavor and nutrition.
