Description

A flavorful and spicy Jamaican dish featuring tender pork belly marinated in jerk seasoning.


Ingredients

  • 2 pounds pork belly
  • 1/4 cup Jamaican jerk seasoning
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon allspice
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper


Instructions

  1. Score the skin of the pork belly in a diamond pattern.
  2. In a bowl, mix together the jerk seasoning, brown sugar, soy sauce, lime juice, garlic, allspice, black pepper, thyme, salt, and cayenne pepper to create a marinade.
  3. Rub the marinade all over the pork belly, making sure it gets into the scores.
  4. Cover and marinate in the refrigerator for at least 3 hours, preferably overnight.
  5. Preheat the oven to 300°F (150°C).
  6. Place the marinated pork belly in a roasting pan and cover with foil.
  7. Roast for 2 to 2.5 hours until tender.
  8. Remove the foil and increase the temperature to 425°F (220°C) to crisp up the skin for about 30 minutes.
  9. Let rest for 10 minutes before slicing.
  10. Serve with your favorite sides.

  • For best flavor, marinate the pork belly overnight.
  • Serve with rice and peas for a traditional Jamaican meal.
