A flavorful and spicy Jamaican dish featuring tender pork belly marinated in jerk seasoning.

- 2 pounds pork belly
- 1/4 cup Jamaican jerk seasoning
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 teaspoon allspice
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
Instructions
- Score the skin of the pork belly in a diamond pattern.
- In a bowl, mix together the jerk seasoning, brown sugar, soy sauce, lime juice, garlic, allspice, black pepper, thyme, salt, and cayenne pepper to create a marinade.
- Rub the marinade all over the pork belly, making sure it gets into the scores.
- Cover and marinate in the refrigerator for at least 3 hours, preferably overnight.
- Preheat the oven to 300°F (150°C).
- Place the marinated pork belly in a roasting pan and cover with foil.
- Roast for 2 to 2.5 hours until tender.
- Remove the foil and increase the temperature to 425°F (220°C) to crisp up the skin for about 30 minutes.
- Let rest for 10 minutes before slicing.
- Serve with your favorite sides.
Notes
- For best flavor, marinate the pork belly overnight.
- Serve with rice and peas for a traditional Jamaican meal.
