Description

Keto Airfried Mochi Donuts are a guilt-free treat that combines the chewy texture of mochi with the delightful taste of donuts, perfect for those following a keto diet.


Ingredients

Scale
  • 1/2 cup almond flour
  • 2 tablespoons coconut flour
  • 2 tablespoons oat fiber
  • 1 tablespoon glucomannan powder (or substitute with more psyllium husk powder)
  • 1 tablespoon psyllium husk powder
  • 1/4 cup allulose
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum
  • 3.5 ounces silken tofu
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 tablespoons water
  • 2 tablespoons avocado oil (for molding the balls)

For the glaze:

  • 1/4 cup powdered Swerve
  • 1 teaspoon extract of your choice (ube or strawberry recommended)
  • 1 tablespoon water
  • Food coloring (optional)

Instructions

  1. Press silken tofu through a sieve until smooth. Stir in egg and vanilla extract. Set aside.
  2. In a separate bowl, whisk together almond flour, coconut flour, oat fiber, glucomannan (or psyllium), allulose, baking powder, and xanthan gum.
  3. Add the wet mixture into the dry ingredients and mix until dough starts to form. Add water and continue mixing until a thick dough ball forms. Let rest for 10 minutes.
  4. Rub avocado oil on your palms. Roll dough into 8-gram balls (about 40 total).
  5. Arrange 8 balls in a ring shape on parchment paper to form one donut. You should get 5 donuts.
  6. Air fry at 325°F for 12–15 minutes until golden and firm.
  7. Cool on a rack for 10 minutes.
  8. Mix glaze ingredients until smooth. Adjust consistency with more or less water.
  9. Dip each donut and let the glaze set on the rack.
  10. Enjoy warm or at room temperature for best texture.

Notes

  • Add 1/4 teaspoon of almond extract to the dough for a richer flavor profile.
  • Try a chocolate glaze using cocoa powder, powdered Swerve, and a dash of almond milk.
