Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.

- In a separate bowl, cream the erythritol and softened butter together until light and fluffy.
- Incorporate the egg and vanilla extract into the butter mixture, mixing until fully blended.
- Gradually fold the dry ingredients into the wet mixture, stirring until a cohesive dough forms.
- Take tablespoon-sized pieces of the dough and roll them into balls, arranging them on the prepared baking sheet about 2 inches apart.
