Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, whisk together the almond flour, cocoa powder, baking powder, and salt until well combined.
  3. In a separate bowl, cream the erythritol and softened butter together until light and fluffy.
  4. Incorporate the egg and vanilla extract into the butter mixture, mixing until fully blended.
  5. Gradually fold the dry ingredients into the wet mixture, stirring until a cohesive dough forms.
  6. Take tablespoon-sized pieces of the dough and roll them into balls, arranging them on the prepared baking sheet about 2 inches apart.
