- 2 cups almond flour
- 1 cup ricotta cheese
- 3 large eggs
- 1/2 cup granulated erythritol
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp almond extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the almond flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the eggs, ricotta cheese, melted butter, vanilla extract, and almond extract.
- Combine the wet and dry ingredients until smooth.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For a richer flavor, allow the cake to rest overnight in the refrigerator.
- Top with whipped cream or berries for added flavor.
