- 2 cups cottage cheese
- 2 apples, sliced
- 1 teaspoon cinnamon
- 1/4 cup sweetener of choice
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup almond flour
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the cottage cheese, eggs, sweetener, and vanilla extract.
- Add the sliced apples and cinnamon to the mixture, and fold gently.
- Stir in the almond flour and mix until well combined.
- If using, fold in walnuts for extra crunch.
- Transfer the mixture to a greased baking dish.
- Bake for 30-35 minutes, or until set and golden on top.
- Allow to cool slightly before serving.
Notes
- Serve warm or cold.
- Top with whipped cream for added richness.
- Can be stored in the refrigerator for up to 3 days.
