Ingredients

  • 2 ripe avocados
  • 4 eggs
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 1/4 teaspoon paprika (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the avocados in half and remove the pit.
  3. Scoop out a little flesh to make room for the egg.
  4. Drizzle olive oil over the avocado halves.
  5. Crack an egg into each avocado half.
  6. Season with salt, black pepper, and paprika.
  7. Sprinkle cheese on top.
  8. Place the avocados in a baking dish and bake for 15-20 minutes or until the eggs are set.
  9. Remove from oven and let cool slightly before serving.
