  • 1 teaspoon turmeric powder

  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder (adjust to taste)
  • 1/2 cup coconut flour
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 cup avocado oil (for frying)


Instructions

  1. In a large bowl, combine the chicken pieces with salt, black pepper, turmeric, paprika, garlic powder, onion powder, ground coriander, ground cumin, and chili powder. Mix well to coat the chicken evenly. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
  2. In a shallow dish, place the coconut flour. In another bowl, whisk together the eggs and almond milk until well combined.
  3. Remove the marinated chicken from the refrigerator. Dip each piece first into the egg mixture, allowing excess to drip off, then coat it in the coconut flour, pressing gently to adhere.
  4. Heat the avocado oil in a large skillet over medium-high heat. Once hot, carefully add the coated chicken pieces in batches, ensuring not to overcrowd the pan. Fry for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).
  5. Once cooked, transfer the chicken to a paper towel-lined plate to drain excess oil. Serve hot.
