Keto Ayam Masak Lemak is a creamy turmeric chicken dish that is both flavorful and low in carbs, perfect for a keto diet.


Ingredients

  • 2 pounds chicken thighs, skin-on, bone-in
  • 1 tablespoon coconut oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon turmeric powder
  • 1 teaspoon chili powder (adjust to taste)
  • 1 can (13.5 ounces) coconut milk
  • 1 cup chicken broth
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro, for garnish


Instructions

  1. In a large pot or Dutch oven, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
  3. Add the turmeric powder and chili powder, stirring well to combine with the onion mixture. Cook for another minute.
  4. Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
  5. Pour in the coconut milk and chicken broth, stirring to combine. Add the fish sauce and lime juice, then season with salt and pepper to taste.
  6. Bring the mixture to a gentle simmer, then cover and cook for 30-35 minutes, or until the chicken is cooked through and tender.
  7. Remove the lid and let the sauce thicken for an additional 5-10 minutes if desired.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • For added flavor, include a few kaffir lime leaves during cooking.
