- 2 pounds chicken thighs, skin-on, bone-in
- 1 tablespoon coconut oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon turmeric powder
- 1 teaspoon chili powder (adjust to taste)
- 1 can (13.5 ounces) coconut milk
- 1 cup chicken broth
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- In a large pot or Dutch oven, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
- Add the turmeric powder and chili powder, stirring well to combine with the onion mixture. Cook for another minute.
- Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
- Pour in the coconut milk and chicken broth, stirring to combine. Add the fish sauce and lime juice, then season with salt and pepper to taste.
- Bring the mixture to a gentle simmer, then cover and cook for 30-35 minutes, or until the chicken is cooked through and tender.
- Remove the lid and let the sauce thicken for an additional 5-10 minutes if desired.
- Serve hot, garnished with fresh cilantro.
Notes
- For added flavor, include a few kaffir lime leaves during cooking.
- To make it spicier, add sliced fresh chili peppers or increase the chili powder.
