  • 1 pound ground beef
  • 8 slices of bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes (canned, drained)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup cauliflower rice (fresh or frozen)
  • 2 large eggs, beaten

Instructions

  1. Prep all ingredients: chop bacon, dice onion, mince garlic, and rice cauliflower if using fresh.
  2. Cook bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and drain on paper towels, reserving grease.
  3. Sauté onion and garlic in the bacon grease for 2-3 minutes until translucent. Add ground beef and cook until browned, seasoning with salt, pepper, Worcestershire sauce, and Italian seasoning.
  4. Stir in cauliflower rice, heavy cream, diced tomatoes, and half of the cheddar cheese. Mix well and let cool slightly before adding beaten eggs.
  5. Transfer mixture to a greased 9×13-inch baking dish, top with remaining cheddar cheese and crispy bacon. Bake at 350°F for 30-35 minutes until cheese is bubbly and casserole is set.
