- 1 pound ground beef
- 8 slices of bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes (canned, drained)
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup cauliflower rice (fresh or frozen)
- 2 large eggs, beaten
Instructions
- Prep all ingredients: chop bacon, dice onion, mince garlic, and rice cauliflower if using fresh.
- Cook bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and drain on paper towels, reserving grease.
- Sauté onion and garlic in the bacon grease for 2-3 minutes until translucent. Add ground beef and cook until browned, seasoning with salt, pepper, Worcestershire sauce, and Italian seasoning.
- Stir in cauliflower rice, heavy cream, diced tomatoes, and half of the cheddar cheese. Mix well and let cool slightly before adding beaten eggs.
- Transfer mixture to a greased 9×13-inch baking dish, top with remaining cheddar cheese and crispy bacon. Bake at 350°F for 30-35 minutes until cheese is bubbly and casserole is set.
