  • 1 pound ground beef (80/20)
  • 4 slices of bacon, chopped
  • 1 cup cauliflower rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup diced pickles
  • 1/4 cup diced red onion
  • 1/4 cup sugar-free ketchup
  • 2 tablespoons mustard
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh lettuce leaves for serving

Instructions

  1. Heat a large skillet over medium heat and add the ground beef, seasoning with salt and pepper. Cook for 6-8 minutes until browned and fully cooked, then drain excess fat.
  2. In the same skillet, add the chopped bacon and cook over medium heat until crispy, about 5-7 minutes. Remove and set aside, leaving the drippings in the skillet.
  3. In a separate pan, heat 2 tablespoons of olive oil over medium heat and sauté the cauliflower rice for 5-7 minutes until tender, seasoning with salt and pepper.
  4. Assemble the bowl by starting with a scoop of sautéed cauliflower rice, then layer on the cooked ground beef and crispy bacon.
  5. Add shredded cheddar cheese, diced tomatoes, pickles, and red onion on top. Drizzle with sugar-free ketchup and mustard, and serve with fresh lettuce leaves.
