Ingredients

  • 1 pound ground beef
  • 6 slices bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley (for garnish)


Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
  3. Add the ground beef, diced onion, and minced garlic to the skillet. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the cherry tomatoes, salt, black pepper, smoked paprika, and oregano. Cook for an additional 2-3 minutes until the tomatoes soften.
  5. In a separate bowl, whisk together the eggs and heavy cream until well combined.
  6. In a greased 9×13 inch baking dish, layer the beef mixture evenly.
  7. Pour the egg mixture over the beef, then sprinkle the cooked bacon and shredded cheddar cheese on top.
  8. Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the cheese is bubbly and golden.
  9. Let the casserole cool for 5 minutes before garnishing with chopped parsley and serving.
