- 1 pound ground beef
- 6 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 4 large eggs
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 350°F.
- In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
- Add the ground beef, diced onion, and minced garlic to the skillet. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the cherry tomatoes, salt, black pepper, smoked paprika, and oregano. Cook for an additional 2-3 minutes until the tomatoes soften.
- In a separate bowl, whisk together the eggs and heavy cream until well combined.
- In a greased 9×13 inch baking dish, layer the beef mixture evenly.
- Pour the egg mixture over the beef, then sprinkle the cooked bacon and shredded cheddar cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the cheese is bubbly and golden.
- Let the casserole cool for 5 minutes before garnishing with chopped parsley and serving.
Notes
- For a spicier kick, add diced jalapeños to the beef mixture.
- You can substitute the ground beef with ground turkey or chicken for a lighter option.
