- 2 ripe avocados
- 1 pound ground beef or turkey
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the avocados in half and remove the pits, scooping out a bit of the flesh to create a cavity.
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until soft and translucent (about 3-4 minutes).
- Add minced garlic and cook for another minute.
- Introduce the ground beef or turkey, breaking it up as it cooks until browned (about 5-7 minutes).
- Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper, stirring to combine and cook for an additional 2-3 minutes.
- Remove from heat and mix in half of the shredded cheddar cheese until melted.
- Arrange avocado halves in a baking dish and fill each with the spiced meat mixture.
- Top with remaining cheddar cheese and bake for 15-20 minutes until cheese is melted and bubbling.
- Allow to cool slightly and garnish with fresh cilantro or parsley before serving.
