Ingredients

  • 2 ripe avocados
  • 1 pound ground beef or turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Fresh cilantro or parsley for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the avocados in half and remove the pits, scooping out a bit of the flesh to create a cavity.
  3. In a skillet, heat olive oil over medium heat and sauté the chopped onion until soft and translucent (about 3-4 minutes).
  4. Add minced garlic and cook for another minute.
  5. Introduce the ground beef or turkey, breaking it up as it cooks until browned (about 5-7 minutes).
  6. Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper, stirring to combine and cook for an additional 2-3 minutes.
  7. Remove from heat and mix in half of the shredded cheddar cheese until melted.
  8. Arrange avocado halves in a baking dish and fill each with the spiced meat mixture.
  9. Top with remaining cheddar cheese and bake for 15-20 minutes until cheese is melted and bubbling.
  10. Allow to cool slightly and garnish with fresh cilantro or parsley before serving.
