Instructions
- Prepare your ingredients by dicing the onion and celery, mincing the garlic, and chopping the cabbage into bite-sized pieces.
- Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing for 3-4 minutes until the onion is translucent.
- Add the ground beef to the pot, breaking it apart as it cooks. Stir occasionally until browned, draining excess fat if necessary.
- Stir in the diced celery and carrots (if using) and cook for another 3-4 minutes. Then, pour in the beef broth, add the chopped cabbage and undrained diced tomatoes, and sprinkle in the oregano, thyme, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally. Adjust seasoning if needed before serving.
