- 2 cups almond flour
- 1/2 cup cocoa powder
- 1/2 cup unsweetened sweetener of choice
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 4 large eggs
- 16 ounces cream cheese, softened
- 1/2 cup heavy cream
- 1/2 cup powdered sweetener
- 1 cup cherries, pitted and sliced
- 2 tablespoons sugar-free cherry syrup (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine almond flour, cocoa powder, sweetener, melted butter, vanilla extract, and salt; mix well to form a crust.
- Press the crust mixture into the bottom of a springform pan and bake for 10 minutes. Let cool.
- In a mixing bowl, beat cream cheese until smooth, then add heavy cream and powdered sweetener until well combined.
- Incorporate eggs one at a time, mixing until fully combined.
- Pour the cream cheese mixture over the cooled crust and bake for 45–50 minutes or until set.
- Remove from oven and refrigerate for at least 4 hours or overnight.
- Top with sliced cherries and optional cherry syrup before serving.

- This cheesecake can be topped with whipped cream for added richness.
