Description

A delicious low-carb cheesecake inspired by the classic Black Forest cake, featuring a rich chocolate flavor and luscious cherry topping.


Ingredients

  • 2 cups almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup unsweetened sweetener of choice
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 4 large eggs
  • 16 ounces cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup powdered sweetener
  • 1 cup cherries, pitted and sliced
  • 2 tablespoons sugar-free cherry syrup (optional)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine almond flour, cocoa powder, sweetener, melted butter, vanilla extract, and salt; mix well to form a crust.
  3. Press the crust mixture into the bottom of a springform pan and bake for 10 minutes. Let cool.
  4. In a mixing bowl, beat cream cheese until smooth, then add heavy cream and powdered sweetener until well combined.
  5. Incorporate eggs one at a time, mixing until fully combined.
  6. Pour the cream cheese mixture over the cooled crust and bake for 45–50 minutes or until set.
  7. Remove from oven and refrigerate for at least 4 hours or overnight.
  8. Top with sliced cherries and optional cherry syrup before serving.
