- 8 ounces cremini mushrooms, finely chopped
- 4 cloves black garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 ounces cream cheese, softened
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon lemon juice
Instructions
- In a large skillet, heat the olive oil and butter over medium heat.
- Add the finely chopped mushrooms and sauté for about 5-7 minutes, or until they are softened and any liquid has evaporated.
- Stir in the minced black garlic, thyme, salt, and black pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld.
- Remove from heat and let the mixture cool slightly.
- In a mixing bowl, combine the mushroom mixture with the softened cream cheese, grated Parmesan cheese, and lemon juice. Mix until well combined and creamy.
- Transfer the spread to a serving dish and refrigerate for at least 30 minutes to allow the flavors to develop.
- Serve chilled or at room temperature with keto-friendly crackers or vegetable sticks.
Notes
- For an extra kick, add a pinch of red pepper flakes to the mushroom mixture while cooking.
