- 1/2 cup heavy cream
- 1/4 cup granulated erythritol (or preferred keto sweetener)
- 4 large egg yolks
- 1/4 cup black sesame paste (tahini)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon cornstarch (optional, for thicker custard)
Instructions
- Preheat your oven to 325°F. Prepare a baking dish by placing it on the middle rack and filling it with hot water to create a water bath for the custard cups.
- In a medium saucepan, combine the almond milk, heavy cream, and erythritol. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.
- In a separate bowl, whisk together the egg yolks, black sesame paste, vanilla extract, and salt until well combined.
- Slowly pour the warm milk mixture into the egg yolk mixture, whisking continuously to temper the eggs and prevent them from scrambling.
- If using cornstarch, dissolve it in a small amount of cold water and add it to the mixture, whisking until smooth.
- Strain the custard mixture through a fine mesh sieve into a large measuring cup or bowl to remove any lumps.
- Pour the custard mixture evenly into individual ramekins or cups.
- Carefully place the ramekins in the prepared baking dish with hot water, ensuring the water reaches halfway up the sides of the ramekins.
- Bake for 25-30 minutes, or until the custards are set but still slightly jiggly in the center.
- Remove the ramekins from the water bath and let them cool to room temperature, then refrigerate for at least 2 hours before serving.
Notes
- For added flavor, consider mixing in a teaspoon of matcha powder or a few drops of almond extract to the custard mixture.
- Top the custard with a sprinkle of toasted black sesame seeds or a dollop of whipped cream for an elegant presentation.
