Ingredients

  • 1 cup unsweetened shredded coconut
  • 1 cup rich coconut cream
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup monk fruit sweetener (or your favorite keto sweetener)
  • 1 teaspoon pure vanilla extract
  • A dash of sea salt
  • Additional shredded coconut for coating


Instructions

  1. In a medium saucepan, blend the coconut cream, cocoa powder, monk fruit sweetener, vanilla extract, and sea salt until smooth.
  2. Set the saucepan over medium heat and continuously stir the mixture until it thickens and begins to separate from the pan, which should take about 10-15 minutes.
  3. Once thickened, remove from heat and fold in the shredded coconut until fully incorporated.
  4. Pour the mixture onto a greased plate or a parchment-lined tray, allowing it to cool to room temperature.
  5. Chill in the refrigerator for approximately 30 minutes to help it firm up.
  6. After chilling, take small portions of the mixture and shape them into bite-sized balls, roughly 1 inch in diameter.
  7. Roll each ball in additional shredded coconut to create a delightful coating.
  8. Arrange the finished bites on a serving platter and refrigerate for another 30 minutes before indulging.
