Ingredients

- 1 cup unsweetened shredded coconut
- 1 cup rich coconut cream
- 1/4 cup unsweetened cocoa powder
- 1/4 cup monk fruit sweetener (or your favorite keto sweetener)
- 1 teaspoon pure vanilla extract
- A dash of sea salt
- Additional shredded coconut for coating
Instructions
- In a medium saucepan, blend the coconut cream, cocoa powder, monk fruit sweetener, vanilla extract, and sea salt until smooth.
- Set the saucepan over medium heat and continuously stir the mixture until it thickens and begins to separate from the pan, which should take about 10-15 minutes.
- Once thickened, remove from heat and fold in the shredded coconut until fully incorporated.
- Pour the mixture onto a greased plate or a parchment-lined tray, allowing it to cool to room temperature.
- Chill in the refrigerator for approximately 30 minutes to help it firm up.
- After chilling, take small portions of the mixture and shape them into bite-sized balls, roughly 1 inch in diameter.
- Roll each ball in additional shredded coconut to create a delightful coating.
- Arrange the finished bites on a serving platter and refrigerate for another 30 minutes before indulging.

- For an extra chocolatey flavor, consider mixing in a tablespoon of cocoa powder with the shredded coconut before rolling.
- To add a unique twist, incorporate a few drops of almond or lemon extract into the mixture before chilling.
