Description

Keto Brazilian Guava Cheesecake is a delicious delight!

Ingredients

Scale
  • 1 ½ cups almond flour
  • ½ cup unsweetened cocoa powder
  • ½ cup granulated erythritol
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 16 ounces cream cheese, softened
  • 1 cup guava paste, diced
  • 3 large eggs
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F and prepare a 9-inch springform pan with a light coating of cooking spray or butter.
  2. In a mixing bowl, blend together the almond flour, cocoa powder, erythritol, melted butter, 1 teaspoon of vanilla extract, baking powder, and salt until the mixture is uniform.
  3. Firmly press this blend into the bottom of the springform pan to create a solid crust.
  4. In another bowl, whip the softened cream cheese until it reaches a creamy consistency.
  5. Incorporate the diced guava paste, mixing thoroughly.
  6. Gradually add the eggs, one at a time, ensuring each is fully blended before adding the next.
  7. Stir in the lemon juice and the additional teaspoon of vanilla extract until the mixture is smooth and well combined.
  8. Carefully pour the cream cheese filling over the crust, using a spatula to even out the surface.
  9. Place the pan in the oven and bake for 40-45 minutes, or until the edges are firm and the center retains a slight jiggle.
  10. Once done, turn off the oven and let the cheesecake sit inside for an hour to cool slowly.
  11. After cooling, take the cheesecake out of the oven and let it reach room temperature.
  12. For the best flavor and texture, refrigerate it for at least 4 hours or overnight.
  13. When ready to serve, slice the cheesecake and enjoy it chilled.

Notes

  • For best results, use room temperature cream cheese.
  • Ensure the guava paste is diced evenly for consistent flavor in each slice.
