- Preheat your oven to 350°F and prepare a 9-inch springform pan with a light coating of cooking spray or butter.
- In a mixing bowl, blend together the almond flour, cocoa powder, erythritol, melted butter, 1 teaspoon of vanilla extract, baking powder, and salt until the mixture is uniform.
- Firmly press this blend into the bottom of the springform pan to create a solid crust.
- In another bowl, whip the softened cream cheese until it reaches a creamy consistency.
- Incorporate the diced guava paste, mixing thoroughly.
- Gradually add the eggs, one at a time, ensuring each is fully blended before adding the next.
- Stir in the lemon juice and the additional teaspoon of vanilla extract until the mixture is smooth and well combined.
- Carefully pour the cream cheese filling over the crust, using a spatula to even out the surface.
- Place the pan in the oven and bake for 40-45 minutes, or until the edges are firm and the center retains a slight jiggle.
- Once done, turn off the oven and let the cheesecake sit inside for an hour to cool slowly.
- After cooling, take the cheesecake out of the oven and let it reach room temperature.
- For the best flavor and texture, refrigerate it for at least 4 hours or overnight.
