Description

A creamy and cheesy keto-friendly broccoli cheddar soup that’s perfect for a comforting meal.


Ingredients

  • 4 cups broccoli florets
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  2. Add broccoli florets and chicken broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  3. Use an immersion blender to puree the soup until smooth.
  4. Stir in heavy cream and shredded cheddar cheese until melted and combined.
  5. Season with salt and pepper to taste. Serve hot.
