- 4 cups chopped broccoli
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a pot, melt the butter over medium heat and sauté the onion and garlic until soft.
- Add the chopped broccoli and chicken broth. Bring to a boil, then reduce heat and simmer until the broccoli is tender.
- Use an immersion blender to puree the soup to your desired consistency.
- Stir in the heavy cream and cheese until melted and combined.
- Season with salt and pepper to taste. Serve warm.
