Description

A creamy and delicious keto-friendly broccoli cheese soup that’s easy to make and perfect for a comforting meal.


Ingredients

  • 4 cups chopped broccoli
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. In a pot, melt the butter over medium heat and sauté the onion and garlic until soft.
  2. Add the chopped broccoli and chicken broth. Bring to a boil, then reduce heat and simmer until the broccoli is tender.
  3. Use an immersion blender to puree the soup to your desired consistency.
  4. Stir in the heavy cream and cheese until melted and combined.
