Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 ounces fresh mozzarella cheese, sliced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic vinegar (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
  3. Add the chicken to the skillet and sear for about 4-5 minutes on each side until golden brown.
  4. Transfer the chicken to a baking dish. Top each breast with slices of fresh mozzarella and halved cherry tomatoes.
  5. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  6. Remove from the oven and sprinkle with fresh basil. Drizzle with balsamic vinegar if desired before serving.
