A delicious and easy Keto Caprese Chicken recipe that combines juicy chicken breasts with fresh mozzarella, cherry tomatoes, and basil.

- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 8 ounces fresh mozzarella cheese, sliced
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons balsamic vinegar (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
- Add the chicken to the skillet and sear for about 4-5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish. Top each breast with slices of fresh mozzarella and halved cherry tomatoes.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove from the oven and sprinkle with fresh basil. Drizzle with balsamic vinegar if desired before serving.
Notes
- For added flavor, marinate the chicken in olive oil, garlic, and Italian herbs for 30 minutes before cooking.
- Substitute the cherry tomatoes with roasted red peppers for a different taste.
