Description

A delicious low-carb dessert that combines the flavors of caramel, mocha, and cheesecake.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup butter, melted
  • 1/4 cup sweetener (erythritol or your choice)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 16 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup sweetener (erythritol or your choice)
  • 2 large eggs
  • 2 tablespoons coffee, brewed and cooled
  • 1/4 cup caramel sauce (sugar-free)


Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine almond flour, cocoa powder, melted butter, sweetener, vanilla extract, and baking powder. Mix until well combined.
  3. Press the mixture into the bottom of the prepared pan to form the crust.
  4. In another bowl, beat the cream cheese until smooth. Add heavy cream, sweetener, eggs, and coffee. Mix until well combined and smooth.
  5. Pour the cream cheese mixture over the crust and smooth the top.
  6. Bake for 30-35 minutes or until set. Allow to cool completely.
  7. Drizzle the sugar-free caramel sauce on top before serving.

Notes

  • Store leftovers in the refrigerator for up to 5 days.
  • These bars freeze well for up to 3 months.
