- 1 teaspoon rose water
- 1/2 cup finely chopped pistachios (plus more for coating)
- 1/4 cup unsweetened shredded coconut (optional for coating)
Instructions
- In a large bowl, mix the almond flour, cocoa powder, erythritol, ground cardamom, and sea salt until thoroughly blended.
- In another bowl, combine the coconut milk and rose water, whisking until smooth.
- Slowly add the wet mixture to the dry ingredients, stirring continuously until a cohesive dough forms. If too dry, add more coconut milk, a teaspoon at a time.
- Gently fold in the chopped pistachios until evenly distributed.
- Chill the mixture in the refrigerator for about 30 minutes to firm up.
- After chilling, take small portions of the dough and roll them into small balls.
- Roll each truffle in the remaining chopped pistachios or shredded coconut, if desired, to coat them evenly.
- Arrange the truffles on a tray lined with parchment paper and return them to the refrigerator for an additional 15 minutes to set properly.
Notes
- For a unique twist, swap out the rose water for orange blossom water.
- Sprinkle a tiny pinch of sea salt on each truffle before chilling for an enhanced flavor experience.
