Ingredients

  • 1/4 cup powdered erythritol (or your favorite keto sweetener)
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon sea salt
  • 1/4 cup canned coconut milk
  • 1 teaspoon rose water
  • 1/2 cup finely chopped pistachios (plus more for coating)
  • 1/4 cup unsweetened shredded coconut (optional for coating)


Instructions

  1. In a large bowl, mix the almond flour, cocoa powder, erythritol, ground cardamom, and sea salt until thoroughly blended.
  2. In another bowl, combine the coconut milk and rose water, whisking until smooth.
  3. Slowly add the wet mixture to the dry ingredients, stirring continuously until a cohesive dough forms. If too dry, add more coconut milk, a teaspoon at a time.
  4. Gently fold in the chopped pistachios until evenly distributed.
  5. Chill the mixture in the refrigerator for about 30 minutes to firm up.
  6. After chilling, take small portions of the dough and roll them into small balls.
  7. Roll each truffle in the remaining chopped pistachios or shredded coconut, if desired, to coat them evenly.
  8. Arrange the truffles on a tray lined with parchment paper and return them to the refrigerator for an additional 15 minutes to set properly.

Notes

  • For a unique twist, swap out the rose water for orange blossom water.
