Ingredients

  • 1/2 cup Erythritol or preferred sweetener
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, combine almond flour, sweetener, baking powder, baking soda, spices, and salt.
  3. In another bowl, beat the eggs, then mix in the applesauce and vanilla extract.
  4. Combine the wet and dry ingredients, stirring until well mixed. Fold in grated carrots and walnuts if using.
  5. Pour the batter into the prepared cake pan and smooth the top.
