- 4 large eggs
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 2 cups grated carrots
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, combine almond flour, sweetener, baking powder, baking soda, spices, and salt.
- In another bowl, beat the eggs, then mix in the applesauce and vanilla extract.
- Combine the wet and dry ingredients, stirring until well mixed. Fold in grated carrots and walnuts if using.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick comes out clean.
