Description

Keto Cauliflower Beef Casserole is a delicious and satisfying dish that fits perfectly into a ketogenic diet, combining tender cauliflower with savory ground beef for a hearty meal that is low in carbs and high in flavor.

Ingredients

Scale
  • 1 head of cauliflower, chopped into florets
  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash and chop the cauliflower into small florets.
  2. Boil the cauliflower florets in a large pot of water for 5-7 minutes until tender, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat, then sauté diced onion and minced garlic until translucent.
  4. Add ground beef to the skillet and cook until browned, draining excess fat.
  5. Stir in heavy cream, Italian seasoning, salt, and black pepper into the beef mixture and let it simmer for 2-3 minutes.
  6. In a large baking dish, layer the cooked cauliflower at the bottom, then pour the beef mixture over it.
  7. Sprinkle shredded cheddar cheese and grated Parmesan cheese on top.
  8. Preheat the oven to 375°F and bake the casserole for 25-30 minutes until the cheese is bubbly and golden brown.
  9. Let the casserole cool for a few minutes before serving, garnishing with fresh parsley if desired.

Notes

  • Choose a fresh head of cauliflower for the best texture and flavor.
  • Avoid overcooking the cauliflower to prevent mushiness.
  • Drain the ground beef well after cooking to reduce greasiness.
  • Feel free to experiment with seasonings to suit your taste.
  • Store leftovers in an airtight container in the fridge for up to 3-4 days.
