- 2 cups riced cauliflower (fresh or frozen)
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 1/2 cup erythritol or your preferred keto sweetener
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 4 large eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup melted coconut oil or butter
- 1 teaspoon vanilla extract
For the cinnamon swirl:
- 2 tablespoons erythritol
- 1 tablespoon ground cinnamon
- 1 tablespoon melted coconut oil or butter
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
- In a large mixing bowl, combine the riced cauliflower, almond flour, coconut flour, erythritol, cocoa powder, baking powder, baking soda, salt, and ground cinnamon. Mix well until all dry ingredients are combined.
- In another bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until smooth. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- In a small bowl, mix together the erythritol, ground cinnamon, and melted coconut oil to create the cinnamon swirl mixture.
- Pour half of the cake batter into the prepared cake pan. Spoon half of the cinnamon swirl mixture over the batter and use a knife to gently swirl it in. Pour the remaining batter on top and repeat the swirling process with the remaining cinnamon mixture.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

- This cake serves 8.
- For added flavor, consider mixing in some chopped nuts or sugar-free chocolate chips into the batter.
