A delicious and surprising Keto Cauliflower Cinnamon Swirl Cake that is low in carbs and perfect for keto diets.


Ingredients

Scale
  • 2 cups riced cauliflower (fresh or frozen)
  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup erythritol or your preferred keto sweetener
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 4 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract

For the cinnamon swirl:

  • 2 tablespoons erythritol
  • 1 tablespoon ground cinnamon
  • 1 tablespoon melted coconut oil or butter


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
  2. In a large mixing bowl, combine the riced cauliflower, almond flour, coconut flour, erythritol, cocoa powder, baking powder, baking soda, salt, and ground cinnamon. Mix well until all dry ingredients are combined.
  3. In another bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until smooth. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  4. In a small bowl, mix together the erythritol, ground cinnamon, and melted coconut oil to create the cinnamon swirl mixture.
  5. Pour half of the cake batter into the prepared cake pan. Spoon half of the cinnamon swirl mixture over the batter and use a knife to gently swirl it in. Pour the remaining batter on top and repeat the swirling process with the remaining cinnamon mixture.
  6. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
