Ingredients

  • 1 medium head of cauliflower, riced (about 3 cups)
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sugar-free pizza sauce
  • 1 cup additional shredded mozzarella cheese (for topping)
  • Toppings of your choice (pepperoni, bell peppers, olives, etc.)

Instructions

  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. In a food processor, pulse the riced cauliflower until it resembles fine crumbs. Transfer to a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large bowl, combine the riced cauliflower, egg, 1 cup mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper. Mix until well combined.
  4. Spread the cauliflower mixture onto the prepared baking sheet, shaping it into a round pizza crust about 1/4 inch thick.
  5. Bake the crust in the preheated oven for 12-15 minutes, or until golden brown and firm.
  6. Remove the crust from the oven and spread the sugar-free pizza sauce evenly over the top. Sprinkle with the remaining mozzarella cheese and your choice of toppings.
  7. Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  8. Allow the pizza to cool for a few minutes before slicing and serving.
