Keto Cauliflower Hash Browns are a delicious and crispy alternative to traditional hash browns, perfect for a low-carb diet.


Ingredients

  • 2 cups riced cauliflower (fresh or frozen)
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup almond flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. If using fresh cauliflower, rice it using a food processor or box grater. If using frozen, thaw and drain excess moisture.
  2. In a large mixing bowl, combine the riced cauliflower, egg, cheddar cheese, almond flour, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  4. Scoop about 1/4 cup of the cauliflower mixture and form it into a patty. Place it in the skillet and flatten slightly. Repeat with remaining mixture, adding more oil as needed.
  5. Cook for 4-5 minutes on each side or until golden brown and crispy. Remove from skillet and drain on paper towels.
  6. Serve warm as a side dish or breakfast item.

Notes

  • For added flavor, mix in cooked bacon bits or chopped green onions into the cauliflower mixture.
  • To make these hash browns extra crispy, bake them in the oven at 400°F for 15-20 minutes after frying.
