  • 1 head of cauliflower, cut into bite-sized florets
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh curry leaves, chopped (or 1 teaspoon dried curry leaves)
  • 1/4 cup olive oil (for frying)


Instructions

  1. Preheat your oven to 400°F (200°C) if you prefer baking. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, grated Parmesan cheese, garlic powder, onion powder, ground cumin, turmeric powder, red chili powder, salt, and black pepper.
  3. In another bowl, whisk the eggs until well beaten. Add the chopped curry leaves to the eggs and mix well.
  4. Dip each cauliflower floret into the egg mixture, allowing any excess to drip off, then coat it in the almond flour mixture. Place the coated florets on the prepared baking sheet.
  5. If frying, heat the olive oil in a large skillet over medium heat. Fry the coated cauliflower nuggets in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
  6. If baking, drizzle the coated florets with a little olive oil and bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  7. Serve warm with your favorite dipping sauce.
