Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1/2 cup soy sauce (or coconut aminos for a soy-free alternative)
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Chopped green onions for garnish (optional)


Instructions

  1. Whisk together the soy sauce, apple cider vinegar, water, minced garlic, bay leaves, black peppercorns, and smoked paprika in a mixing bowl.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated, and let them marinate for a minimum of 30 minutes, or up to 4 hours in the refrigerator.
  3. In a large pot or deep skillet, heat the olive oil over medium-high heat.
  4. Remove the chicken from the marinade (keeping the marinade for later) and place the thighs skin-side down in the pot. Sear for approximately 5-7 minutes until golden crust forms, then flip and cook for an additional 5 minutes.
  5. Remove the chicken from the pot and set aside.
  6. Add the sliced onion to the same pot and sauté until soft and translucent, about 3-4 minutes.
  7. Return the chicken to the pot and pour the reserved marinade over it.
  8. Bring the mixture to a gentle simmer, then lower the heat to maintain a slow cook. Cover the pot and allow the chicken to stew for 30-40 minutes, or until thoroughly cooked and tender.
  9. For a thicker sauce, uncover the pot and let it simmer for an extra 5-10 minutes. Adjust salt as needed.
  10. Serve the stew hot, garnished with chopped green onions if desired.
