A delicious and healthy Keto Chicken and Broccoli Stir Fry that is perfect for a low-carb diet.


Ingredients

  • 1 teaspoon sesame oil
  • 1 tablespoon olive oil
  • 1 pound skinless, boneless chicken breasts, cut into strips
  • 3 cups broccoli florets
  • ¼ cup chicken broth
  • ½ cup low sodium soy sauce
  • 3 tablespoons erythritol
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • ¼ teaspoon xanthan gum
  • 1 tablespoon sesame seeds

Instructions

  1. Heat the sesame oil and olive oil in a skillet over medium-high heat.
  2. Add the chicken strips to the heated skillet and cook for 7-10 minutes, or until the chicken is browned and cooked through.
  3. Remove the chicken from the skillet and set aside. Add the broccoli florets to the skillet, reduce the heat, cover, and steam until the broccoli is tender.
  4. Return the cooked chicken to the skillet with the broccoli.
  5. In a separate bowl, combine all the sauce ingredients and mix well.
  6. Pour the sauce over the chicken and broccoli, stirring to coat evenly.
  7. Continue cooking until the sauce thickens and coats the chicken and broccoli.
  8. Sprinkle with sesame seeds before serving.

Notes

  • For added heat, include red pepper flakes or sliced jalapeños in the stir fry.
