Ingredients

- 1 teaspoon sesame oil
- 1 tablespoon olive oil
- 1 pound skinless, boneless chicken breasts, cut into strips
- 3 cups broccoli florets
- ¼ cup chicken broth
- ½ cup low sodium soy sauce
- 3 tablespoons erythritol
- 4 cloves garlic, minced
- 1 teaspoon ginger, grated
- ¼ teaspoon xanthan gum
- 1 tablespoon sesame seeds
Instructions
- Heat the sesame oil and olive oil in a skillet over medium-high heat.
- Add the chicken strips to the heated skillet and cook for 7-10 minutes, or until the chicken is browned and cooked through.
- Remove the chicken from the skillet and set aside. Add the broccoli florets to the skillet, reduce the heat, cover, and steam until the broccoli is tender.
- Return the cooked chicken to the skillet with the broccoli.
- In a separate bowl, combine all the sauce ingredients and mix well.
- Pour the sauce over the chicken and broccoli, stirring to coat evenly.
- Continue cooking until the sauce thickens and coats the chicken and broccoli.
- Sprinkle with sesame seeds before serving.
Notes
- For added heat, include red pepper flakes or sliced jalapeños in the stir fry.
- Substitute the broccoli with other low-carb vegetables like bell peppers or zucchini for variety.
