Description
A delicious low-carb meal featuring tender chicken thighs and sautéed cabbage, perfect for a keto diet.
Ingredients
Scale
- 2 cups green cabbage, shredded
- 1 pound boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Season the chicken thighs with garlic powder, onion powder, paprika, salt, and pepper.
- Add the chicken thighs to the skillet and cook for about 5-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove the chicken from the skillet and let it rest.
- In the same skillet, add the shredded cabbage and sauté for about 5 minutes, until it is tender and slightly caramelized.
- Slice the cooked chicken thighs and return them to the skillet with the cabbage. Stir to combine and heat through for an additional 2-3 minutes.
- Remove from heat and sprinkle the shredded cheddar cheese on top. Cover the skillet for a couple of minutes to allow the cheese to melt.
- Serve the chicken and cabbage mixture on plates, topped with a dollop of sour cream and garnished with fresh parsley.
Notes
- For a spicier kick, add a pinch of cayenne pepper or some red pepper flakes to the chicken seasoning.
- You can also substitute the chicken thighs with chicken breasts if you prefer a leaner cut.
