- 2 large boneless, skinless chicken breasts
- 1/2 cup unsalted butter, softened
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup almond flour
- 2 large eggs, beaten
- 1 cup crushed pork rinds
- Olive oil or avocado oil for frying
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the softened butter with minced garlic, parsley, dill, lemon juice, salt, and pepper, stirring until smooth.
- Place the chicken breasts on a cutting board and cover with plastic wrap. Gently pound to an even thickness of about 1/2 inch.
- Spoon a generous amount of the garlic herb butter mixture into the center of each chicken breast. Fold the edges over the filling and roll tightly, securing with toothpicks if needed.
- Prepare a breading station with almond flour in one dish, beaten eggs in another, and crushed pork rinds in a third.
- Coat each chicken roll in almond flour, dip in beaten eggs, and roll in crushed pork rinds for an even coating.
- Heat a skillet over medium heat and add enough oil to cover the bottom. Once hot, add the chicken rolls and cook for about 3-4 minutes per side until golden brown.
- Transfer the chicken rolls to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove from the oven and allow to rest for a few minutes before slicing and serving.
Notes
- For an extra kick, mix in a pinch of red pepper flakes with the garlic herb butter.
- Feel free to swap out the herbs for your personal favorites, like basil or thyme, to create a unique flavor.
