Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1/2 cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup almond flour
  • 2 large eggs, beaten
  • 1 cup crushed pork rinds
  • Olive oil or avocado oil for frying


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the softened butter with minced garlic, parsley, dill, lemon juice, salt, and pepper, stirring until smooth.
  3. Place the chicken breasts on a cutting board and cover with plastic wrap. Gently pound to an even thickness of about 1/2 inch.
  4. Spoon a generous amount of the garlic herb butter mixture into the center of each chicken breast. Fold the edges over the filling and roll tightly, securing with toothpicks if needed.
  5. Prepare a breading station with almond flour in one dish, beaten eggs in another, and crushed pork rinds in a third.
  6. Coat each chicken roll in almond flour, dip in beaten eggs, and roll in crushed pork rinds for an even coating.
  7. Heat a skillet over medium heat and add enough oil to cover the bottom. Once hot, add the chicken rolls and cook for about 3-4 minutes per side until golden brown.
  8. Transfer the chicken rolls to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  9. Remove from the oven and allow to rest for a few minutes before slicing and serving.

Notes

  • For an extra kick, mix in a pinch of red pepper flakes with the garlic herb butter.
  • Feel free to swap out the herbs for your personal favorites, like basil or thyme, to create a unique flavor.
