Keto Chicken Pastilla Cups with Almond Dust are savory, low-carb cups filled with shredded chicken and topped with toasted almonds, perfect for a keto diet.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sliced almonds
  • 1 tablespoon olive oil
  • 1 tablespoon butter


Instructions

  1. Preheat your oven to 375°F.
  2. In a mixing bowl, combine the shredded chicken, chopped parsley, cinnamon, cumin, paprika, salt, and black pepper.
  3. In a separate bowl, mix the almond flour, Parmesan cheese, and one egg until a cohesive dough forms.
  4. Lightly grease a muffin tin with olive oil and press the almond flour mixture into the base and sides to create cup shapes.
  5. Spoon the chicken mixture into each almond cup, packing it down gently.
  6. In a small pan over medium heat, melt the butter and toast the sliced almonds until golden brown, about 3-4 minutes.
  7. Sprinkle the toasted almonds over the chicken-filled cups.
  8. Whisk the second egg and brush it over the tops of the cups.
  9. Bake in the oven for 20-25 minutes, or until the cups are golden and firm to the touch.
  10. Allow to cool for a few minutes before lifting them out of the muffin tin.

Notes

  • For extra flavor, add a dash of cayenne pepper to the chicken mixture.
  • Shredded turkey can be used instead of chicken for a variation.
