- 2 cups shredded cooked chicken
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup fresh parsley, chopped
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup sliced almonds
- 1 tablespoon olive oil
- 1 tablespoon butter
Instructions
- Preheat your oven to 375°F.
- In a mixing bowl, combine the shredded chicken, chopped parsley, cinnamon, cumin, paprika, salt, and black pepper.
- In a separate bowl, mix the almond flour, Parmesan cheese, and one egg until a cohesive dough forms.
- Lightly grease a muffin tin with olive oil and press the almond flour mixture into the base and sides to create cup shapes.
- Spoon the chicken mixture into each almond cup, packing it down gently.
- In a small pan over medium heat, melt the butter and toast the sliced almonds until golden brown, about 3-4 minutes.
- Sprinkle the toasted almonds over the chicken-filled cups.
- Whisk the second egg and brush it over the tops of the cups.
- Bake in the oven for 20-25 minutes, or until the cups are golden and firm to the touch.
- Allow to cool for a few minutes before lifting them out of the muffin tin.
Notes
- For extra flavor, add a dash of cayenne pepper to the chicken mixture.
- Shredded turkey can be used instead of chicken for a variation.
