- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup unsalted pistachios, chopped
- 1/4 cup olive oil
- 2 tablespoons rose water
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- In a large bowl, combine the olive oil, rose water, garlic powder, onion powder, cumin, paprika, salt, and pepper. Whisk until well blended.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- In the last few minutes of cooking, sprinkle the chopped pistachios over the skewers, allowing them to toast slightly.
- Remove the skewers from the grill and let them rest for a few minutes before serving. Enjoy warm.
