- 3 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup coconut milk
- 1 cup cauliflower florets
- 1 cup spinach, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 cup walnuts, chopped
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the curry powder, turmeric, and cumin to the pot, stirring well to combine with the onion mixture. Cook for another minute to toast the spices.
- Pour in the chicken broth and coconut milk, bringing the mixture to a gentle simmer.
- Add the shredded chicken, cauliflower florets, and chopped spinach to the pot. Simmer for about 15-20 minutes, or until the cauliflower is tender.
- Stir in the chopped walnuts and season with salt and pepper to taste. Allow to simmer for an additional 5 minutes.
- Serve hot, garnished with fresh cilantro if desired.
Notes
- For added creaminess, blend a portion of the soup and return it to the pot before adding the walnuts.
- Substitute the chicken with cooked shrimp or tofu for a different protein option.
