Ingredients

- 1 pound ground beef
- 1 pound ground pork
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes (no sugar added)
- 1 can (6 ounces) tomato paste (no sugar added)
- 1 cup beef broth (low sodium)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 small bell pepper, diced (optional)
- 1 can (15 ounces) kidney beans, drained and rinsed (optional for a less strict keto)
Instructions
- In a large pot over medium heat, brown the ground beef and ground pork until fully cooked. Drain excess fat if necessary.
- Add the diced onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
- Stir in the diced tomatoes, tomato paste, and beef broth.
- Add the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Mix well.
- If using, add the diced bell pepper and kidney beans. Bring the mixture to a simmer.
- Reduce heat to low and let it simmer uncovered for 30-45 minutes, stirring occasionally, until thickened to your liking.
- Taste and adjust seasoning if necessary before serving.
Notes
- For added flavor, top with shredded cheese, sour cream, or avocado slices before serving.
- For a spicier kick, add diced jalapeños or a dash of cayenne pepper to the chili while it simmers.
