Description

A creamy and delicious Keto Choclo Soup (Corn-Free Version) made with fresh vegetables and coconut cream.


Ingredients

Scale
  • 2 tablespoons avocado oil
  • 1 medium shallot, chopped
  • 3 cloves garlic, minced
  • 1 medium yellow squash, diced
  • 1 red bell pepper, chopped
  • 1 ½ cups broccoli florets
  • 5 cups vegetable stock
  • 1 teaspoon coriander
  • 1 teaspoon chili powder
  • Salt and freshly ground black pepper to taste
  • 1 cup coconut cream
  • 1 cup grated mozzarella cheese
  • Chopped green onions, for garnish


Instructions

  1. In a large saucepan, warm the avocado oil over medium heat. Add the chopped shallot and sauté until it becomes soft and translucent, about 4 minutes.
  2. Incorporate the minced garlic and cook for another minute, allowing the aroma to fill the kitchen.
  3. Introduce the diced yellow squash and red bell pepper, stirring occasionally for about 6 minutes until they soften.
  4. Next, add the broccoli florets, vegetable stock, coriander, chili powder, salt, and pepper. Bring the mixture to a rolling boil, then lower the heat and let it simmer for 20 minutes, or until the broccoli is tender.
  5. Once cooked, use a blender to puree the soup until it reaches a velvety consistency. If you don’t have a blender, you can use a potato masher for a chunkier texture.
  6. Return the pureed soup to the heat and mix in the coconut cream and grated mozzarella cheese. Stir gently until the cheese has melted and the soup is warmed through.
  7. Adjust the seasoning to your liking, then serve hot, topped with chopped green onions for a fresh finish.

Notes

  • For an extra protein boost, mix in some cooked quinoa or diced tofu before serving.
  • If you enjoy a kick, toss in some crushed red pepper flakes during the cooking process for added heat.
