- 2 cups almond flour
- 1/2 cup erythritol
- 1/2 cup sugar-free chocolate chips
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup melted butter
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the almond flour, erythritol, baking soda, and salt.
- In another bowl, combine melted butter, egg, and vanilla extract.
- Mix the wet and dry ingredients together until well combined.
- Fold in the sugar-free chocolate chips.
- Using a spoon, drop dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until golden brown.
- Let cool before serving.
Notes
- For a softer cookie, remove from the oven sooner.
- Store in an airtight container for up to a week.
