Ingredients

  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol or your preferred keto sweetener
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate (85% cocoa or higher), chopped

Instructions

  1. In a mixing bowl, combine the unsweetened shredded coconut, almond flour, melted coconut oil, unsweetened cocoa powder, erythritol, vanilla extract, and salt. Mix until a sticky dough forms.
  2. In a microwave-safe bowl, melt the chopped dark chocolate in 30-second intervals, stirring in between until smooth.
  3. Line an 8×8 inch baking dish with parchment paper. Press the coconut mixture evenly into the bottom of the dish. Pour the melted chocolate over the coconut layer and spread evenly.
  4. Chill the baking dish in the refrigerator for at least one hour until the chocolate sets. Once firm, lift the bars out using the parchment paper and cut into squares or rectangles.
