Description

Delicious and guilt-free keto chocolate covered peanut butter cookies.


Ingredients

Scale
  • 1 cup natural peanut butter
  • 1/2 cup erythritol or other keto sweetener
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 cup sugar-free chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the peanut butter, sweetener, egg, vanilla, and baking soda until combined.
  3. Roll the dough into balls and place them on a baking sheet lined with parchment paper.
  4. Flatten the balls with a fork to create a crisscross pattern.
  5. Bake for 10 minutes, then let cool.
  6. Melt the sugar-free chocolate chips and dip the cooled cookies halfway into the chocolate.
  7. Place on parchment paper to set.

Notes

  • Store cookies in an airtight container for up to a week.
  • You can use almond butter instead of peanut butter for a different flavor.
