Delicious and guilt-free keto chocolate covered peanut butter cookies.
Ingredients

- 1 cup natural peanut butter
- 1/2 cup erythritol or other keto sweetener
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 cup sugar-free chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the peanut butter, sweetener, egg, vanilla, and baking soda until combined.
- Roll the dough into balls and place them on a baking sheet lined with parchment paper.
- Flatten the balls with a fork to create a crisscross pattern.
- Bake for 10 minutes, then let cool.
- Melt the sugar-free chocolate chips and dip the cooled cookies halfway into the chocolate.
- Place on parchment paper to set.
Notes
- Store cookies in an airtight container for up to a week.
- You can use almond butter instead of peanut butter for a different flavor.
