Instructions
- In a medium bowl, combine coconut flakes and chopped nuts if using.
- In a microwave-safe bowl, melt the sugar-free chocolate chips and almond butter together until smooth.
- Stir in the vanilla extract into the melted mixture.
- Pour the chocolate mixture over the coconut and nuts, and mix until well combined.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes or until set.
