Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup erythritol or preferred sweetener
  • 1/4 cup chopped hazelnuts
  • 2 large eggs
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the almond flour, cocoa powder, erythritol, baking powder, and salt.
  3. In a separate bowl, whisk the eggs, melted coconut oil, and vanilla extract.
  4. Combine the wet and dry ingredients and stir in chopped hazelnuts.
  5. Drop spoonfuls of cookie dough onto the prepared baking sheet.
